Lentil Curry

A good side dish. Is possible to use that as a main.

Note: different lentils cook differently. Brown lentils will still have texture in this recipe. Green lentils will be very firm and red lentils will be mush.

Ingredients:

1 yellow onion
2 cloves of garlic
2 cups brown lentils
1 sweet potato
2 carrots
3 Tbps curry powder
1/2 tsp cloves
1 can diced tomatoes
1 can tomato sauce
3 cups vegitable broth
1 can coconut milk

Directions:

1. Dice garlic

2. Peel sweet potato and cut into 1/2 inch cubes.

3. Place all ingredients except coconut milk in slow cooker.

4. Cook on high for 4 hours or on low for 7-8 hours. (My slow cooker only has low). Done when most of the liquid is gone.

5. Stir in coconut milk.

6. Stir in salt.
